Ingredients

  • 2 packages of Udon noodles
  • 400 g peeled shrimp
  • 2 shallots
  • 2 cloves of garlic
  • ½ red chili pepper
  • 2 carrots
  • 100 g green bean pods
  • 2 tablespoons of sesame oil
  • 4 tablespoons of dark soy sauce
  • 4 tablespoons of brown cane sugar
  • 4 tablespoons of oyster sauce
  • 2 tablespoons of lime juice
  • 1 handful of fresh coriander
  • White sesame seeds for garnish

Instructions

    Prepare the sauce by mixing dark soy sauce, brown sugar, oyster sauce, and lime juice in a bowl until the sugar dissolves. Tip: lime juice can be replaced with the same amount of rice vinegar.

    In a wok or a large pan, heat the sesame oil over medium heat. Add the finely chopped shallots, crushed garlic, and thinly sliced chili pepper. Add the shrimp and sauté for about 3 minutes until they turn pink.

    Add the carrots cut into long, thin strips (julienne) and green bean pods to the pan. Pour in the previously prepared sauce and continue to sauté everything for another 2 minutes.

    Finally, add the Udon noodles. Since they are usually pre-cooked, it is enough to heat them in the pan for one minute, stirring well to coat them with the sauce.

    Serve immediately, garnishing the dish with white sesame seeds and fresh coriander leaves. Enjoy!
