Ingredients
- 2 ripe bananas
- 170 g Greek yogurt
- 100 g white wheat flour
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla essence
- 50 ml vegetable oil for frying
- natural yogurt for serving
- maple syrup for serving
- powdered sugar for sprinkling
Instructions
- 1Peel the bananas and cut them into round slices about 3 mm thick.
- 2In a bowl, thoroughly mix the Greek yogurt, egg, vanilla essence, and 2 tablespoons of cold water. In another bowl, combine the flour, baking powder, and cinnamon. Incorporate the dry mixture into the yogurt mixture and mix until you get a smooth batter.
- 3Heat the oil in a pan over medium heat. Place a tablespoon of batter in the pan to form pancakes with a diameter of 6–8 cm. While they are frying, place 3 banana slices on each pancake. When the bottom turns golden, flip them and fry until nicely browned on the other side.
- 4Place the finished pancakes on a plate and serve them with natural yogurt and maple syrup, lightly sprinkled with powdered sugar.
