FOR STEAK AND MARINADE
- 600 g beef flank steak
- 4 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons fish sauce (for marinade and dressing)
- 4 cloves crushed garlic
- 2 teaspoons fresh grated ginger
- 1 pinch ground black pepper
FOR THE SALAD
- 300 g green salad mix
- 3 tablespoons canned corn
- 250 g red cherry tomatoes
- 1 handful fresh cilantro
- 1 handful fresh basil (ideally Thai)
- 1 ripe mango
- 1 large ripe avocado
FOR THE DRESSING
- 3 tablespoons lime juice
- 1 tablespoon cane brown sugar
- 1 red chili pepper, finely chopped
PREPARING MARINADE AND MEAT
- 1In a bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, 1 tablespoon of fish sauce, half of the crushed garlic, and half of the grated ginger. Coat the flank steak well with this marinade and let it marinate for at least 30 minutes (or overnight in the refrigerator for a more intense flavor).
- 2Preheat the grill or a large skillet to high heat. Cook the steak for 4-6 minutes per side, depending on the desired doneness. Transfer the meat to a cutting board and let it rest for 10 minutes before slicing it thinly, against the grain.
ASSEMBLING SALAD AND DRESSING
- 1In a large bowl, combine the salad mix with corn, halved cherry tomatoes, chopped cilantro, and basil. Peel the mango and slice it thinly. Peel the avocado and dice it. Add the mango and avocado to the salad bowl.
- 2For the dressing, combine in a jar or small bowl the lime juice, the remaining soy sauce (2 tablespoons), the remaining sesame oil (1 tablespoon), the remaining fish sauce (1 tablespoon), brown sugar, the rest of the ginger and garlic, plus the chopped chili pepper. Shake well until the sugar is completely dissolved.
- 3Pour the dressing over the salad and toss gently. Distribute the salad onto plates and top with the grilled beef steak slices. Serve immediately.
