Ingredients
- 250 g fresh full-fat cottage cheese
- 100 g unsalted butter
- 150 g red bell pepper
- 50 g green onion
- 15 ml olive oil
- 5 g sweet paprika
- 7 g table salt
Preparation
- 1Place the butter and salt in a food processor and mix at medium speed for at least 10-15 minutes. The butter will change its consistency, becoming lighter in color and more airy.
- 2Meanwhile, clean the green onion and chop it finely (both the white and green parts). Clean the bell pepper of seeds and cut it into the smallest possible cubes.
- 3Mix the sweet paprika with the olive oil. Reduce the food processor speed to minimum and add the paprika and oil mixture. Add the cottage cheese spoon by spoon, and finally incorporate the chopped vegetables. Mix briefly until the composition is homogeneous and beautifully colored.
Tip
For an even finer texture, you can pass the cottage cheese through a sieve before adding it to the mixture. This spread is delicious served on fresh or toasted bread.
