First, prepare the gnocchi dough. Boil the potatoes in their skins in salted water until soft, then peel them after they have cooled. Grate the potatoes finely and place them in a large bowl. Add both types of flour, salt, the egg, and knead until you get a compact dough.
Divide the dough into smaller pieces and roll them into thin ropes. Cut the ropes into pieces of about one centimeter and form small balls. You can create a striped pattern using a fork. Boil the gnocchi in salted boiling water and drain them as soon as they rise to the surface.
Prepare the sauce. In a pan with hot oil, sauté the finely chopped onion and garlic, then add the diced chicken breast. Season everything with salt and pepper.
