Ingredients

  • 500 g of lamb or mutton
  • 400 g of fresh spinach
  • 2 pcs of white onion
  • 4 pcs of garlic cloves
  • 2 tbsp of grated ginger
  • 4 tbsp of sunflower oil
  • 2 tbsp of garam masala
  • 1 tbsp of turmeric powder
  • 2 tsp of chili powder
  • 2 tsp of salt
  • 2 tsp of ground black pepper
  • 3 tbsp of ground coriander

Instructions

    Start by preparing the meat. In a large pan, heat the vegetable oil and fry the chopped onion until soft and lightly golden.

    Add the chopped garlic and grated ginger to the onion and cook for 1-2 minutes or until fragrant.

    Add the meat cut into pieces and cook until browned on all sides.

    Add the spices - ground coriander, garam masala, chili powder, salt, and pepper. Mix well to coat the meat with these spices and let it cook for a few minutes.

    In a separate saucepan, heat the oil and fry the chopped onion until soft.

    Add the chopped garlic and grated ginger and cook for 1-2 minutes.

    Add all the spices - coriander powder, turmeric powder, chili powder, garam masala, salt, and pepper. Mix well.

    Add the spinach leaves. Cook them until they soften and reduce.

    Using a blender or an immersion blender, turn the spinach mixture into a fine paste.

    Add the spinach paste to the cooked meat and mix well. Let it simmer for about 10-15 minutes for the flavors to combine.

    Adjust the taste with salt and pepper, if needed.

    Serve Saag Gosht with basmati rice or fresh naan bread. It can be garnished with sour cream and freshly chopped dill.
