Preparation method
In a large bowl, mix the flour, salt, and cayenne pepper powder (if you choose to use it). Add the cold butter cut into cubes and, using your fingers or a pastry blender, incorporate the butter into the flour until the mixture resembles coarse breadcrumbs. Add the finely grated Parmesan and mix well.
If the dough is too dry and doesn't come together, add a tablespoon of cold water and mix quickly. Form the dough into a ball, wrap it in cling film, and let it rest in the refrigerator for 30 minutes.
Preheat the oven to 180°C. On a lightly floured surface, roll out the chilled dough to a thickness of approximately 3-4 mm. Use a cookie cutter (round or any other shape you prefer) to cut out the crackers. Carefully transfer them to a baking tray lined with baking paper.
Chef's tip
For an even more intense flavor, you can add a little dried thyme to the dough or sesame seeds on top before baking.
