Place the chicken in a medium bowl and season generously with Herbs de Provence, salt, and pepper to taste.

Heat a spacious pan and place the seasoned chicken. Cook for 5-7 minutes over high heat, so that the fat from the skin gradually melts and the meat browns nicely. If necessary, reduce the heat to medium.

Once browned, flip the chicken to the other side, add the 2 tablespoons of oil to the pan, and continue frying the chicken for another 6-7 minutes over medium heat.

Chef's tip

For an extra touch of freshness, you can add a few drops of lemon juice to the butter sauce at the end.
