Aged beef tenderloin is a special cut of meat, and to cook it, it is worth paying attention to the process in order to preserve its tenderness and highlight its flavors. Here's how you can cook aged beef tenderloin:
Ingredients:
Aged beef tenderloin
Salt and freshly ground pepper
Olive oil or butter for cooking
Fresh or dried herbs (thyme, rosemary, sage, etc.) - optional
Instructions:
Preheat the oven: Heat the oven to a high temperature, around 230-250°C.
Season the tenderloin: Sprinkle salt and pepper on all sides of the tenderloin. You can also add fresh or dried herbs to intensify the flavors if you wish.
Sear in a pan: Heat a heat-resistant pan or skillet over medium-high heat. Add olive oil or butter and sear the tenderloin for about 2-3 minutes per side, until nicely browned.
Transfer to the oven: If the pan or skillet you are using can be placed in the oven, transfer the tenderloin directly to the oven and continue cooking for about 10-15 minutes, depending on the thickness of the tenderloin and how cooked you like your meat. You can use a meat thermometer to check the internal temperature (approximately 55-57°C for medium-rare or 63-65°C for medium).
Rest and slice the tenderloin: Once cooked, let the tenderloin rest on a plate for 5-10 minutes. This will allow the juices to redistribute in the meat, and the internal temperature will continue to rise slightly, resulting in an even result. Slice the tenderloin into thin slices before serving.
Aged beef tenderloin has a special texture and taste, so try to cook it simply, to highlight its special characteristics and preserve its authenticity.

Refrigerated product Class A. Storage temperature: between 0°C and 4°C. Cook before consumption. Vacuum packed. Color and smell may be influenced by vacuum packaging. The product will regain its natural color and smell within 15 minutes of opening. Consume within 24 hours of opening the package.
