Consumption recommendation
Perfect for grilling, pan-frying (medium-rare is ideal), steaming and poaching. Raw can be used for sushi or tartare.
Try this great recipe for grilled salmon with hollandaise sauce:
First, prepare the hollandaise sauce base. Pour white wine (0.3 l) into the saucepan, add finely chopped peeled onion and pepper and boil together until about a quarter of the original amount. Strain the mixture into a metal bowl and let it cool slightly. Beat 2 egg yolks into the cooled hollandaise sauce base, place the bowl in a hot water bath and beat the mixture until creamy. Stir in the melted butter (100 g) in portions, salt the sauce to taste and keep warm. Rinse the salmon portions, pat dry, sprinkle the skinless side with pepper and lightly salt. Place them, skin side down, in a skillet with heated oil and fry. When they start to brown slightly, turn the steaks and fry briskly for 2 minutes. Then lower the temperature and cook the steaks slowly (the meat should remain pink and springy inside). Place the steaks on plates, cover with sauce and, for example, add grenaille potatoes.
Storage conditions
Fresh salmon, refrigerated, vacuum packed. Store in the refrigerator at 0-4°C. Use immediately after opening the package.
