Ingredients

  • 300 g chicken breast
  • 70 g grated Parmesan
  • 2 tablespoons olive oil
  • 70 g white onion (finely chopped)
  • 1 tablespoon cane sugar
  • 500 g peeled tomatoes (canned)
  • 1 teaspoon dried oregano
  • 150 g mozzarella (sliced)
  • fresh basil for serving

Instructions

    Preheat the oven to 200–210 °C and prepare an oven-safe dish (approximately 30 × 40 cm).

    Wash the chicken breast, clean it, then season with salt and pepper to taste. In a pan, heat one tablespoon of olive oil over medium heat. When the oil is hot, add the chicken breast and fry for 2–3 minutes on each side, until golden. Remove the chicken from the pan and set aside.

    In the same pan, add the second tablespoon of oil and the finely chopped onion. Sauté over medium heat for 2 minutes. Reduce heat to low, add cane sugar, peeled tomatoes, dried oregano, salt, and pepper. Let everything simmer together for 3–4 minutes.

    Transfer the prepared tomato sauce into the oven-safe dish. Place the chicken breast on top of the sauce, add the mozzarella slices, and sprinkle the grated Parmesan over it. Place the dish in the preheated oven and bake for 13–15 minutes at 200–210 °C.

    Distribute the Parmesan chicken onto 3 plates and serve with your favorite side dish.

    Before serving, you can sprinkle fresh basil on top for extra flavor.
